Tarragon Chicken Salad Sandwiches

On May 15, 2010, I picked fresh tarragon from my garden. I have so many growing and they are very invasive. I have been asking my friends and neighbors if they want to grow tarragon in their garden. Many people took my tarragon plants, but I still have lots to give out. I used a rotisserie chicken and made Tarragon Chicken Salad Sandwiches for my lunch. It was awesome!

Ingredients

2 cups shredded rotisserie chicken

1/4 cup raisins

1/4 cup mayonnaise

1 tablespoon Dijon mustard

2 tablespoons fresh chives

2 tablespoons fresh garlic chives

2 tablespoons fresh tarragon

2 tablespoons sunflower seeds, lightly toasted

1/2 teaspoon ground black pepper

Some bread (I used marble bread today)
